Lots of pics and fun :)

Oh where to begin? So much stuff has been going on!! Let's see- here's the skinny....Mom and Dad came up to visit- they were amazing!! They power sprayed out the entire garage, cleaned, kept the kiddos entertained, visited the kids' schools, took us out for dinner, and generally were just fun to be with :) Then we had sushi night with Frankie and his sister and all the combined children- Frankie was great about helping the kids roll their own sushi, which he is a master at.. as you can see above, Teags decided to forgo the sushi and just have a good old corndog~ Next was Calli's first official haircut that she decided on as far as the style, etc (I had to stop her at the pink hair color however- ya right!) Then on to Easter~ good times had by all- the kids did easter eggs here with me, and then spent the day with their Dad up at Grandma and Poppa's- they had a great time and ate way too much chocolate.... then it became Dad (GG's) birthday- ask him to tell you about the tutu picture at the bank conference- hahaha!! We hope you had a wonderful birthday Dad!! And so that brings us to today with Mother's Day :) Oh wait- Alyx got home a few days before this!!! she is doing so great and we got her for this weekend, so she, Calli, Teags, and Phe'dra (who is Frankie's 10-year-0ld daughter) all made me a fantastically fancy breakfast of Swedish pancakes and woke me up in bed with an awesome quilt that Alyx made me, and some really great homemade cards, and also a lovely necklace that Teags made me--- oh how I loved it! I love being a mom :) And I think I love being a mom so much because I love my mom so much :)

Hellllooooo!!!




Lightest-Ever Olive Oil Angel Hair Pasta

Episode 804: Shiso & Tomatoes

Serves 4

Ingredients

1 red onion, thinly sliced
3 very ripe tomatoes, 1/4 inch dice
1-2 cloves of garlic, minced
16 shiso leaves, shredded, plus some for garnish
1/4 extra-virgin olive oil
Kosher salt and freshly ground black pepper to taste
1 pound angel hair
Reggiano shredded for garnish
Kosher salt and black pepper to taste

Directions

In a bowl, combine the onions, tomatoes, garlic, shredded shiso, and oil. Season and let stand for 5 minutes. Meanwhile, in a large pot, boil water, add salt and blanch angel hair to al dente, about 4 minutes. Drain and toss with tomato mixture, season again, and garnish with Reggiano and shiso leaves.


I had to put this on my main blog, since I don't know if people ever go to my cooking blog or not- this is soooo good- it's really really simple, but tastes delicious and totally reminds me of something my mom and sisters would like. Enjoy!! (By the way- shiso is basically Japanese basil- so you can just use normal basil if you can't find shiso leaves)

I have found that cancelling my satellite TV was a really great idea for me- wow, I am so much more informed about things these days with watching just local news and PBS channels. That's where this recipe came from.....

Ok- I know I've been a slacker on the blogging- please forgive :(
However- Ms. Alyx is currently on her way home right this minute and I will definitely have some pics to post soon of her so we can all see how she has changed in the last long while!! So the big plan is for her dad to bring her to Calli's soccer practice tonight and surprise her sisters- then maybe all of us out to dinner?? We shall see- much more to come soon!
